Clear Soup with Glass Noodles (Kang Jued Woon Sen)

It is a clear and mild soup that contrasts well with accompanying dishes that is either oily or spicy.
½ Pound Minced pork
½ Teaspoon Light soy sauce
¼ Teaspoon White pepper powder
2 Ounce bean thread, soaked in water 5 minutes.
1 Teaspoon Fish sauce
¼ Teaspoon Sugar
1 Teaspoons Chopped green onion
4-5 leaves Cilantro
1 Teaspoon Crushed garlic
5 Cups Chicken Broth
  1. Mix the pork, soy sauce and white pepper together.
  2. Form the mixture into small meatballs.
  3. Bring the chicken broth to a boil.
  4. Add the crushed garlic to the chicken soup.
  5. Put the meatballs in the boiling stock, add the noodles, fish sauce and sugar.
  6. Simmer until the meatballs are cooked. Remove from the heat.
  7. Add the chopped green onion and cilantro leaves.
Serve immediately
