Thai Beef Salad (Yam Neua)

1 Pound Cooked roasted beef
1 Yellow onion, thinly sliced
1 Cucumber; peeled, cut vertically and thinly sliced
¼ Cup Lime juice
1 to 2 Tablespoon Fish sauce
2 to 3 Red chili peppers, crushed
1 to 2 stalk Fresh lemon grass, thinly sliced
12 to 15 Mint leaves
1 Green onion, chopped
3 to 4 leaves Lettuce leaves
4 to 6 sprigs Cilantro
Green cabbage, cut vertically into 2" pieces
  1. Thinly slice roasted beef into 2" strips.
  2. Mix together onion, cucumber, lime juice, fish sauce, chili, lemon grass and mint leaves.
  3. Toss with the prepared beef until mixed well .
  4. Place on top of lettuce leaves on a plate.
  5. Garnish with cilantro sprigs.
  6. Serve with green cabbage.
