Tom Kha Paste

Tom Kha is so good that you may crave it. That is when a bit of preparation pays off. Having some of this prepared paste on hand will let you to quickly make one of the great soups of the world.
2 Tablespoons chopped Lemon grass
8 Garlic clove
10 Coriander roots
10 red Chilies, minced
4 Tablespoon Lime juice
6 Cilantro sprigs, chopped
6 Tablespoons Galangal, sliced
6 Peppercorns
8 Shallots
Blend all the ingredients in a food processor until you have a smooth paste.

You can make a large batch of paste, portion out 3 Tablespoon size mounds on sheets of plastic wrap. Place the wrapped portions in a sealed container and freeze it for later use. The paste can be stored for 6 months
