Fried Noodles with Chicken (Pad See Eiw)

1 Cup Rice noodle (soaked in water)
½ Pound Boneless chicken breast
1 Cup Sliced broccoli or Chinese broccoli
1 Teaspoons Oyster sauce
1 Teaspoons Black soya bean sauce
1 Teaspoon Light soya bean sauce
1 Teaspoons Fish sauce
1½Teaspoon Sugar
1 Teaspoons Minced garlic
4 Tablespoon Vegetable oil

Garnish:

½Teaspoon Hot chili sauce

    Preparation

  1. Soak rice noodles for 15 minutes, drain well.
  2. Break the broccoli into individual branches
  3. Peel and slice the stalks into thin pieces.
  4. Soak the broccoli in cold water for 15 minutes.
  5. Slice the chicken thinly into 1" strips.
  6. Heat 4 Tablespoon of vegetable oil in a wok or a frying pan.
  7. Brown the minced garlic until it is light brown in color.
  8. Add the sliced chicken, and stir-fry for 2 minutes.
  9. Add the sliced broccoli. Turn it over a few times.
  10. Add the soaked rice noodles to the wok
  11. Mix in oyster sauce, fish sauce, soy sauce, sugar.
  12. Stir-fry until noodles are brown.
  13. Place on a serving plate and serve with hot chili sauce.
