Son-In-Law Eggs (Khai Look Koei)

Son-In-Law Eggs Is a direct translation of Thai name for this dish. Khai Look Koei is hard-boiled eggs deep fried and covered with Thai sweet and sour sauce.
6 Hard-boiled eggs
3 Cups Cooking oil
1 Pound Mixed vegetables*
3 to 4 cloves Shallots, finely chopped
2 to 3 cloves Garlic, finely chopped
2 Tablespoon Palm sugar or brown sugar
1 to 2 Teaspoons Fish sauce
¼ Cup Hot water
6 to 8 sprigs Cilantro or Chinese parsley
  1. Peel the hard-boiled eggs.
  2. In a wok, heat oil on a medium heat and stir-fry the egg until golden brown.
  3. Set them aside to cool, then cut the eggs into half lengthwise sections.
  4. In 1 Tablespoon of oil, stir- fry garlic and shallots until they are brown.
  5. Place the garlic and shallots on a paper towel to drain.
  6. Stir-fry the mixed vegetables for 2 to 3 minutes until cooked.
  7. In a saucepan, dissolve palm sugar with hot water
  8. Add fish sauce and mix well. Stir in the garlic and shallots.
  9. To serve, set the eggs on a plate with the vegetables.
  10. Top the eggs with the sauce.
  11. Garnish the dish with Cilantro or Chinese parsley.
*Choose from the following vegetables: Asparagus, Baby corn, Bell peppers, Carrots, Green Cabbage, Mushrooms, Tomatoes, or Water chestnuts.
