Pork with Sweet Basil

1 pound Pork tenderloin, trimmed
2 cups Sweet Basil leaves
4 Scallions
3 Tablespoon Peanut oil
2 Cloves garlic
2 - 3 hot red or green chiles, thinly sliced
2 Teaspoon Fish sauce
2 Teaspoon Soy sauce
1 Tablespoon Sugar
¼ cup Chicken stock or water
    Preparation

  1. Thinly slice the pork across the grain.
  2. Wash, dry and stem the basil.
  3. Mince the white part of the scallion.
  4. Cut the green part into 1 inch pieces.
  5. Heat the wok over a high flame.
  6. Swirl in the oil and heat almost to smoking.
  7. Add the garlic, chilies and white part of scallions.
  8. Cook them for 10 seconds.
  9. Add the pork and stir fry for 1 minute.
  10. Add the fish sauce, soy sauce, sugar, stock and green part of scallions
  11. Bring mixture to a boil.
  12. Stir in the basil and cook until the leaves are wilted and the pork is cooked.
  13. The dish is supposed to be soupy.
  14. Serve at once with rice or noodles.
