If you love the taste of coconut but do not want the rough texture of the coconut meat then this recipe is for you. This steamed dessert combines the silky smoothness of an egg custard with the rich flavor of coconut cream.
5 Large Eggs
1 Cup Coconut cream
1 Cup Sugar
Preparation
- Beat the eggs with coconut cream and sugar until frothy.
- Pour the liquid into small bowls.
- Place them in a steamer over boiling wate.
- Cover & cook for about 20 minutes or until the mixture sets.
Coconut cream is the thick stuff off the top of a can of coconut milk not the stuff used to make Pina Coladas. It's thick and rich but not sweet. Don't shake the can before you open it. Open it carefully and then spoon the thick cream off the top of the coconut milk.
