Thai Stuffed Crab (Poo Jah)

2 cups Crab meat
½ cup Ground pork
1 cup Chopped shrimp
¾ tablespoon Chopped garlic
1 teaspoon Ground white pepper
½ tablespoon Chopped cilantro roots or 2 tsp stems
3 tablespoons soy sauce
1 Jumbo egg
8 Cleaned and dried crab shells
¼ cup Chopped cilantro leaves
2 tablespoons Red chilies, slivered
  1. Combine crab meat, pork, shrimps, garlic, pepper, cilantro roots, and soy sauce well.
  2. Stuff in each crab shell and pack tightly.
  3. Sprinkle cilantro leaves and red chilies.
  4. Smooth the surface and press down securely.
  5. Bring a lot of water to a rapid boil in a steamer.
  6. Arrange in the stuffed Crab shells.
  7. Put several layers of paper towels over the steamer, NOT the food and cover.
  8. Steam for 20 minutes and remove from heat.
  9. Let the steamed Crabs cool.
  10. Beat the egg in a small bowl.
  11. In a large wok, heat lots of oil over medium-high heat.
  12. Dip the stuffed crab in the egg and fry meat side down until golden brown.
  13. Do not fry the crab too long or the stuffing will shrink and fall out of the shell.
  14. Remove from oil and drain well.
  15. Cool slightly and serve immediately.
  16. Serve with Thai Sriracha chili sauce as an appetizer.
Makes 4 servings.
