Spring Rolls (Paw Pia Sod)

Spring Rolls are made with Chinese sausages, bean sprouts, cucumbers, crabmeat and ham wrapped in the spring roll wrapper. They are commonly topped with either peanut butter or plum sauce.
¼ Pound Chinese sausages
½ Pound (2 ½ Cups) Bean sprouts
2 Cucumbers
1 Pound Cooked crabmeat
¼ Pound Boiled ham
1 package Spring roll wrappers
8 bunches Green onions, cut into 5" length
Spring roll sauce or Peanut butter sauce or Plum Sauce
  1. Boil, bake or fry sausages about 5 to 10 minutes until cooked.
  2. Set aside to cool and slice them lengthwise into 8 long pieces
  3. Cook bean sprouts. in hot water for 30 seconds and drain well.
  4. Peel the cucumbers and slice them lengthwise into sausage-size pieces.
  5. Tear the crabmeat into thick shreds and slice ham into thin strips. Set them aside.
  6. Place spring roll wrapper on the flat surface.
  7. Place some of sausages, bean sprouts, cucumbers, crabmeat, and ham top on the wrapper.
  8. Fold the wrapper over the filling, and roll it up toward the top without folding the sides over it.
  9. Repeat this procedure with the remaining wrappers and filling.
  10. Pour sauce over them before serving.
Serve with green onions.
Spring Roll Sauce
½ Tablespoon Chili powder
2 Tablespoon Crispy shallots Pounded
½ Cup Finely ground peanut
1 Tablespoon Sugar
1 Teaspoon Salt
1 Tablespoon Fish sauce
1 Tablespoon Sweet black soy sauce
1 Cup Water
2 Tablespoon Cornstarch, dissolved in ½ Cup water
  1. Dissolve the first 7 ingredients in 1 Cup of water.
  2. Cook over low heat until it boils.
  3. Add cornstarch, stir constantly until thickened.
  4. Remove and pour into a serving dish.
