2¼ pounds. minced King Fish
1 Teaspoon Salt
½ Cup Red curry paste
1 Teaspoons Fish sauce
1 Cup Green bean, finely chopped
2 Kaffir lime leaves, finely chopped
Cooking oil for deep frying
- Sprinkle fish meat with salt.
- Lightly throw mixture against inside of mixing bowl to mix.
- Combine curry paste, fish sauce, and constantly throw to mix well.
- Mix in green bean and kaffir lime leaves.
- Dip your hand in water and roll the fish paste into balls.
- Flatten each piece into a 2" circle.
- Heat oil over medium heat to around 350 degrees.
- Deep-fry fish paste until it expands & is light golden in color.
- Drain the cakes on some paper towels.
- Serve with cucumber salad.
