Fish Cakes (Tod Man)

2¼ pounds. minced King Fish
1 Teaspoon Salt
½ Cup Red curry paste
1 Teaspoons Fish sauce
1 Cup Green bean, finely chopped
2 Kaffir lime leaves, finely chopped
Cooking oil for deep frying
  1. Sprinkle fish meat with salt.
  2. Lightly throw mixture against inside of mixing bowl to mix.
  3. Combine curry paste, fish sauce, and constantly throw to mix well.
  4. Mix in green bean and kaffir lime leaves.
  5. Dip your hand in water and roll the fish paste into balls.
  6. Flatten each piece into a 2" circle.
  7. Heat oil over medium heat to around 350 degrees.
  8. Deep-fry fish paste until it expands & is light golden in color.
  9. Drain the cakes on some paper towels.
  10. Serve with cucumber salad.
